
Are you old enough to remember diet and fitness trends of the eighties? When dieting meant living on grapefruit, cottage cheese, and salads with low-cal dressing and exercise was either jazzercise classes or Jane Fonda on VHS? This isn’t an eighties sort of cottage cheese. It’s whipped to perfection and made delicious for the modern era. I wouldn’t dismiss the eighties altogether though. A while ago, I streamed a Jane Fonda workout on Prime. I wasn’t expecting much, as I do kickboxing and strength training fairly regularly, but it was crazy hard! I don’t know what eighties moms were made of, but I’m scared.
I want two types of people to try this recipe. The first is, people who haven’t had a roasted peach. You haven’t lived yet, so just try it. The second is, people who haven’t been able to get past the texture of cottage cheese. The flavor is mild and lovely, so it’s definitely worth trying whipped.
While peaches and cottage cheese are a perfectly simple breakfast (or dessert), the toppings are what makes this over-the-top. Get creative! I like to pair peaches with blueberries, and I love the crunch that granola provides. If I am feeling extra, I’ll add a honey drizzle. You might like yours with raspberries and a bit of honeycomb. Experiment and find what you love.
Roasted Peaches with Whipped Vanilla Cinnamon Cottage Cheese
I try to keep the sugar on the lighter side to make this healthyish. However, if you are serving this as dessert, you may wish to double the sugar and honey in this recipe to truly make it indulgent.Ingredients
- 4 peaches, halved with pits removed
- 1 tablespoon butter (or coconut oil)
- 1 teaspoon sugar
- Cinnamon
- 16 oz cottage cheese
- 1 teaspoon vanilla
- 1 teaspoon cinnamon
- 1 tablespoon honey
- 1 tablespoon milk
- Toppings. Options include granola, nuts, berries, honey drizzle, honeycomb
Directions
- Oven variation: Preheat oven to 400 degrees. Place pitted peaches in a baking dish. Cut the 1 tablespoon of butter into 8 pieces and place where the pit used to be in each peach half. Sprinkle with a small amount of sugar (I usually use ¼ teaspoon per peach) and cinnamon (I don’t measure, just do a light dusting). Bake for 20 minutes.
Air fryer variation: Preheat the air fryer to 350 degrees. Prepare the air fryer basket with nonstick cooking spray. Place pitted peaches in the air fryer basket. Cut the 1 tablespoon of butter into 8 pieces and place where the pit used to be in each peach half. Sprinkle with a small amount of sugar (I usually use ¼ teaspoon per peach) and cinnamon (I don’t measure, just do a light dusting). Air fry for 7 to 12 minutes.- Combine cottage cheese, vanilla, honey, cinnamon and milk in a food processor or blender. Blend until creamy.
- Assemble the roasted peaches and whipped cottage cheese in bowls and make them beautiful with your preferred toppings. Snap a photo for Instagram and enjoy!
